"Anyone can cook" bolognese

Yes the name is inspired by Chef Gusteau from Ratatouille 🐀 😂

This is a rich, tasty sauce that you can make up with either lentils or mince. It's wonderful for those unconfident cooks or those with fussy households.

700g bottle of passata sauce
3 garlic cloves Garlic
2 tbsp of Nutraorganics stock (IMO the vegetable has the better flavour, but the chicken or beef are more nutritious)
3 Carrots chopped
Olive oil
Braggs 24 Herb and Spice Seasoning (easy cheat for those new to cooking)
1/2 tsp Turmeric
pinch of Black pepper

Heat olive oil in a cast iron pan. Add crushed garlic, turmeric, black pepper and saute. Add chopped carrots, saute, add passata and stock thats been mixed with 200ml of water.

Cover and simmer for 30 minutes, the colour should go darker, and the sauce should thicken. Taste and adjust flavours accordingly, add 4 shakes of the Braggs 24 Herb and Spice Seasoning, if it's still too acidic from the tomatoes, let simmer for longer, otherwise sprinkle with the tiniest pinch of baking soda which will take some of the acidic bite out.

I blend this up with a stick blender, so it's smooth and the carrots, herbs and “bits” that fussy people don’t like are out of sight.

You can freeze this, serve it immediately with pasta and your choice of “mince”, or let it sit in the fridge for a day so the flavours deepen.
